Turkish Meat-Topped Rice Pilaf
Ingredients
- 500g cubed meat
- 1 cup water for cooking meat
- 3 cups rice
- Less than 1/4 cup olive oil
- 1 tablespoon butter
- Meat broth and additional water as needed
- Salt
Sautéing seasonings
- Butter
- Salt
- Red pepper
- Oregano
Preparation
Put the meat in a pot, add 1 cup of water, and cook it; a pressure cooker can be used.
Soak the rice in water for at least half an hour, then wash it well to remove starch.
In a pot, add olive oil and butter; once the butter melts, add the rice and salt, and sauté for 2 minutes.
Pour the boiling meat broth over the rice; it should cover the rice slightly and if insufficient, add more water.
Cook on low heat until the water is absorbed, about 20 minutes.
In another pot, melt butter, add the cooked meat, salt, and spices, and sauté for 2 minutes.
Serve by placing the sautéed meat over the pilaf.
Tips
You can scale the quantities as desired for larger servings.
Using a pressure cooker can speed up the meat cooking process.
