Air Fried Hot Honey Chicken Burger

Ingredients

  • 2 chicken breasts
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1 tsp chipotle chilli flakes
  • 1 tsp sweet smoked paprika
  • Seasoning
  • 50g plain flour
  • 1-2 eggs, beaten
  • 50g panko breadcrumbs
  • Spray vegetable oil
  • 3 tbsp honey
  • 1 tbsp hot sauce
  • 1/2 tsp chilli flakes
  • 2 brioche burger buns
  • Mayonnaise
  • Lettuce

Pickle

  • 60ml white wine vinegar
  • 60ml water
  • 10cm cucumber, very thinly sliced
  • 1-2 tsp honey
  • Thinly sliced red onion (for onion pickle variation)

Preparation

  1. If the chicken breasts are large, place them between sheets of grease proof paper and bash them a little with a rolling pin until they are a more even thickness.

  2. Mix the onion, garlic, cayenne, paprika, chipotle chilli and seasoning with the flour.

  3. Coat the chicken breasts in the flour, then egg and finally the panko breadcrumbs.

  4. Oil the air fryer, preheat to 200c. Add the chicken breasts, spray with more oil and cook for 15 minutes or until cooked, golden and crisp. Finish with a little more salt.

  5. Meanwhile, mix the honey, hot sauce and chilli flakes.

  6. Toast the buns, top with mayonnaise, lettuce, the chicken, a drizzle of hot honey and pickled cucumber or onion. Enjoy.

Pickle making

  1. Combine everything and mix.

  2. Set aside for 30 minutes.

  3. For the onion pickle, do the same but substitute in thinly sliced red onion.
