Preparation
Cut the chicken fillet into two pieces across to make it square-shaped.
Pound the chicken lightly between two pieces of plastic wrap.
In a bowl, mix the salt, onion powder, garlic powder, ginger powder, nutmeg, and white pepper for the spice mix and set aside.
In a bowl, combine the milk, lemon juice, oregano, and add half of the spice mix.
Place the chicken in the milk mixture and refrigerate for several hours.
In a bowl, mix the flour, starch, and the remaining spice mix.
Heat the corn oil in a deep frying pan.
Remove the chicken from the marinade and set aside.
To the milk mixture, add the baking powder, baking soda, and egg; whisk with a hand whisk until mixed, then gradually add the flour mixture to make a liquid batter.
Take a chicken piece, coat it in the flour mixture, then dip it in the batter, then coat again in the flour mixture, press lightly to adhere, and shake off excess flour.
Fry the chicken in the hot oil until golden brown.
For the sauce, in a bowl, mix ketchup, mustard, honey, mayonnaise, and hot sauce.
In a skillet, heat butter, place the burger bun cut-side down in the butter, and toast until golden.
Spread some sauce on the bread, add the pickles, tomato, lettuce, then the hot chicken, add a cheese slice, top with the other half of the bun, and serve immediately.
