Vegetarian Mug Pie with Baked Beans

Ingredients

  • Half a brown onion
  • 100g plant-based beef style strips
  • Half NYC deli pastrami
  • One meat-free beef flavour stock cube
  • Baked beans
  • Salt
  • Black pepper
  • 25g puff pastry
  • One egg

Side vegetables

  • Parsnips
  • Chantenay carrots
  • Potatoes
  • Tender stem broccoli

Preparation

  1. Finely dice the brown onion and fry it off

  2. Shred the plant-based beef style strips and mix with shredded pieces of NYC deli pastrami

  3. Pan fry the mixture with the meat-free beef flavour stock cube

  4. Add baked beans to the mixture

  5. Pop the filling into a enamel mug and top with puff pastry

  6. Brush the pastry with beaten egg and bake until golden and puffed
