Vegetarian Shepherd's Pie with Vegetables

Ingredients

  • meat-free mince
  • water
  • vegetable stock cube
  • onion salt
  • black pepper
  • white pepper
  • 1 tablespoon cornflour
  • gravy browning

Topping

  • mashed potatoes (Marabel variety)
  • extra mature cheddar cheese
  • double Gloucester cheese

Vegetables

  • parsnips
  • chantenay carrots
  • tender stem broccoli

Preparation

  1. Mix cornflour with a little cold water to make a slurry.

  2. Cook the meat-free mince with water, vegetable stock cube, onion salt, black and white pepper, and gravy browning until heated through.

  3. Add the cornflour slurry to thicken the mixture.

  4. Top with mashed potatoes and sprinkle with cheeses.

  5. Bake or grill until golden and bubbly.

Vegetable

  1. Cook parsnips, chantenay carrots, and tender stem broccoli until tender using your preferred method.

Tips

  1. Marabel potatoes are ideal for mashing due to their soft, buttery flesh.
