Cake with Dried Fruits

Ingredients

  • 300g wheat flour
  • 180g sugar
  • 4 eggs
  • 220g butter
  • 320g dried fruits
  • zest of one orange
  • 30g orange juice
  • 200g cognac
  • 10g baking powder
  • spices to taste

Preparation

  1. Wash the dried fruits and soak them in cognac overnight. The next day, drain them in a colander and allow excess moisture to drain. Chop any large dried fruits into smaller pieces.

  2. Ensure all ingredients are at room temperature. In a bowl, mix flour, baking powder, and spices, then set aside.

  3. Cream the softened butter with sugar until light and fluffy. Add eggs one at a time, beating well after each addition until smooth. Then add freshly squeezed orange juice and the zest of one orange, and beat until combined.

  4. Sift the dry ingredients and fold them into the butter mixture until uniform.

  5. Gently fold in the prepared dried fruits and mix well.

  6. Grease a baking pan with butter, dust it with flour, and pour in the batter. Bake in a preheated oven at 160°C for 45-50 minutes.
