Chocolate Chip Goji Berry Cookies
Ingredients
- 2 flax eggs
- 2 tbsp coconut oil
- 1/4 cup tahini
- 1 tbsp maple syrup or 3 drops monk fruit (add 1-2 more tbsp for a sweeter cookie)
- 1 tsp apple cider vinegar
- 1 tbsp chia seeds
- 1 tbsp psyllium husk (optional)
- 3/4 cup almond or hazelnut flour
- 3 tbsp vegan extra dark chocolate chips
- 1 tbsp Goji Berries
- 1 tsp Baking soda
- pink sea salt sprinkle
Preparation
Combine all wet ingredients in a mixing bowl.
Add dry ingredients except sea salt and mix until cookie dough forms.
Spoon onto a lined cookie sheet, sprinkle sea salt over the cookies.
Bake at 350 degrees for 15 minutes.
