Chocolate Chip Goji Berry Cookies

Ingredients

  • 2 flax eggs
  • 2 tbsp coconut oil
  • 1/4 cup tahini
  • 1 tbsp maple syrup or 3 drops monk fruit (add 1-2 more tbsp for a sweeter cookie)
  • 1 tsp apple cider vinegar
  • 1 tbsp chia seeds
  • 1 tbsp psyllium husk (optional)
  • 3/4 cup almond or hazelnut flour
  • 3 tbsp vegan extra dark chocolate chips
  • 1 tbsp Goji Berries
  • 1 tsp Baking soda
  • pink sea salt sprinkle

Preparation

  1. Combine all wet ingredients in a mixing bowl.

  2. Add dry ingredients except sea salt and mix until cookie dough forms.

  3. Spoon onto a lined cookie sheet, sprinkle sea salt over the cookies.

  4. Bake at 350 degrees for 15 minutes.
