Cottage Cheese Vanilla Buns

Ingredients

  • 200 grams cottage cheese
  • 2 eggs
  • 250 grams whole wheat flour
  • 1 vanilla pod
  • 50 grams erythritol
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon vinegar
  • 1 egg, beaten

Preparation

  1. Preheat the oven to 175 degrees Celsius.

  2. Scrape the vanilla from the pod and blend it with cottage cheese, eggs, and erythritol until smooth.

  3. In a bowl, mix baking soda with vinegar, then add flour and baking powder.

  4. Pour the blender mixture into the bowl and mix well.

  5. Knead the dough on a floured work surface; it may be sticky.

  6. Shape the dough into 8 balls and brush them with the beaten egg.

  7. Bake for 25 minutes, then allow to cool before serving.
