Gingerbread Apple Baked Oats
Ingredients
- 2 bananas
- 2 cups oatmeal
- 2 cups plant milk
- 2 tbsp molasses
- 1.5 tsp vanilla
- 2 tbsp chia (or ground flax)
- 1 tsp baking powder
- 2 tsp cinnamon
- 1 tsp ginger
- 0.5 tsp nutmeg
- 0.25 tsp salt
- 1 large apple, diced
Icing
- silken tofu
- lemon juice
- vegan vanilla protein powder
- water as needed
Preparation
Mash the bananas, add the rest of the ingredients, and mix well.
Bake at 375°F for 30 minutes.
Top with the high protein vegan icing.
Icing
Blend silken tofu, lemon juice, and vegan vanilla protein powder together.
Add water as needed to thin the mixture.
