Gingerbread Apple Baked Oats

Ingredients

  • 2 bananas
  • 2 cups oatmeal
  • 2 cups plant milk
  • 2 tbsp molasses
  • 1.5 tsp vanilla
  • 2 tbsp chia (or ground flax)
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 0.5 tsp nutmeg
  • 0.25 tsp salt
  • 1 large apple, diced

Icing

  • silken tofu
  • lemon juice
  • vegan vanilla protein powder
  • water as needed

Preparation

  1. Mash the bananas, add the rest of the ingredients, and mix well.

  2. Bake at 375°F for 30 minutes.

  3. Top with the high protein vegan icing.

Icing

  1. Blend silken tofu, lemon juice, and vegan vanilla protein powder together.

  2. Add water as needed to thin the mixture.

Notes
