Homemade Apple-Filled Biscuits
Ingredients
Dough
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 1/2 cups flour
- 1/2 cup sugar
- 1/2 cup butter, chilled and cut into small pieces
- 1 teaspoon lemon zest
Filling
- 2 apples
- 2 tablespoons butter
- 1 tablespoon honey
- 2 teaspoons starch
- 1/2 teaspoon lemon zest
- 1/2 teaspoon cinnamon
For decoration
- powdered sugar
Preparation
In a cup, place the egg and vanilla, whisk lightly with a fork and set aside
In a bowl, place flour, sugar, butter and lemon zest, mix with fingertips until butter is incorporated and resembles breadcrumbs
Add the egg mixture and mix with fingers, then gather the dough together
Shape the dough into a disc, wrap it and refrigerate for an hour
For the filling, peel the apples and cut into small cubes, in a saucepan place apples, butter, cinnamon, lemon zest and honey, cook on low heat until dry and let cool
Roll out the dough and cut into halves, place about a spoonful of apple filling on the dough in several spaced places
Place the other half of dough on top
Using a 2-inch round cutter, cut out circles and reroll and cut the remaining dough
Preheat oven to 180°C and prepare baking sheets with parchment paper
Place biscuits on sheets with space between them
Bake for 15 minutes until golden
