Oil-Free Peach Coffee Cake Skillet

Ingredients

  • 3/4 cup plain or vanilla non dairy yogurt
  • 1/4 cup raw almond butter*
  • 1/3 cup coconut sugar
  • 1 cup fine oat flour*
  • 1 tsp baking soda
  • 2 small peaches or one large
  • Rolled oats for topping, optional

Preparation

  1. Preheat oven to 350 degrees

  2. Oil a 6” cast iron skillet

  3. In a medium bowl mix the yogurt, almond butter and coconut sugar

  4. Add dry ingredients and mix until just combined

  5. Chop one peach and fold into batter

  6. Batter will be thick! Using a spatula turn batter into oiled skillet

  7. Slice additional peach and arrange on top

  8. Sprinkle with a little coconut sugar a handful of rolled oats if you wish

  9. Bake for 20 - 25 minutes

  10. I tested this recipe with both organic white flour + homemade gluten free oat flour which I made by blending gluten free rolled oats in a high speed blender

  11. Both came out well! Also, for a #nutfree version, tahini works in place of the almond butter
