Pandan Bread Pudding with Custard Sauce

Ingredients

  • 8 slices bread (as needed)
  • 1 cup milk
  • 3 eggs
  • 1 tablespoon custard powder
  • a little vanilla essence
  • a pinch of salt
  • Optional: raisins or other dried fruits

Custard sauce

  • 1 cup milk
  • a little vanilla essence
  • 1 tablespoon custard powder
  • a pinch of salt
  • pandan leaves

Preparation

  1. Grease a baking dish with margarine and tear the bread slices into it.

  2. Optionally, sprinkle raisins or other dried fruits over the bread.

  3. In a bowl, mix 1 cup milk, 3 eggs, 1 tablespoon custard powder, a little vanilla essence, and a pinch of salt until well combined.

  4. Pour the mixture over the bread and let it soak for a few minutes.

  5. Bake in a preheated oven at 180°C for about 20 minutes or until set, adjusting temperature if needed.

  6. For the custard sauce, in a saucepan, combine 1 cup milk, a little vanilla essence, 1 tablespoon custard powder, a pinch of salt, and pandan leaves.

  7. Stir continuously and cook over heat until thickened, adding more milk or water if too thick.
