Pandan Bread Pudding with Custard Sauce
Ingredients
- 8 slices bread (as needed)
- 1 cup milk
- 3 eggs
- 1 tablespoon custard powder
- a little vanilla essence
- a pinch of salt
- Optional: raisins or other dried fruits
Custard sauce
- 1 cup milk
- a little vanilla essence
- 1 tablespoon custard powder
- a pinch of salt
- pandan leaves
Preparation
Grease a baking dish with margarine and tear the bread slices into it.
Optionally, sprinkle raisins or other dried fruits over the bread.
In a bowl, mix 1 cup milk, 3 eggs, 1 tablespoon custard powder, a little vanilla essence, and a pinch of salt until well combined.
Pour the mixture over the bread and let it soak for a few minutes.
Bake in a preheated oven at 180°C for about 20 minutes or until set, adjusting temperature if needed.
For the custard sauce, in a saucepan, combine 1 cup milk, a little vanilla essence, 1 tablespoon custard powder, a pinch of salt, and pandan leaves.
Stir continuously and cook over heat until thickened, adding more milk or water if too thick.
