Simple Vegan Shortbread Cookies with Dates
Ingredients
- 1 cup vegan margarine
- 1/2 cup powdered sugar
- 1/4 cup corn starch
- 1.5 cups flour
- 3-4 dates, chopped
Preparation
In a stand mixer, whip together margarine and sugar until fluffy.
Add cornstarch and flour and continue to whip until dough comes together.
Place on parchment paper and roll out with a floured rolling pin to 1/2 inch thickness.
Place paper on baking sheet and lightly cut the dough into squares for marking.
Poke each square with a fork and add a piece of date to the centre.
Bake in a pre-heated oven at 350 degrees F for 15-17 minutes or until bottoms are lightly browned.
While cookies are still hot, carefully re-cut the cookies to easily separate.
