Simple Vegan Shortbread Cookies with Dates

Ingredients

  • 1 cup vegan margarine
  • 1/2 cup powdered sugar
  • 1/4 cup corn starch
  • 1.5 cups flour
  • 3-4 dates, chopped

Preparation

  1. In a stand mixer, whip together margarine and sugar until fluffy.

  2. Add cornstarch and flour and continue to whip until dough comes together.

  3. Place on parchment paper and roll out with a floured rolling pin to 1/2 inch thickness.

  4. Place paper on baking sheet and lightly cut the dough into squares for marking.

  5. Poke each square with a fork and add a piece of date to the centre.

  6. Bake in a pre-heated oven at 350 degrees F for 15-17 minutes or until bottoms are lightly browned.

  7. While cookies are still hot, carefully re-cut the cookies to easily separate.

  8. Let cool completely and enjoy.
