Wholemeal Blueberry Loaf

Ingredients

  • 1 tablespoon ground flax seeds
  • 3 tablespoons water
  • 1/2 cup plant milk (soy)
  • 1/2 cup olive oil
  • 1/2 cup raw brown sugar
  • 1 teaspoon vanilla bean paste
  • 1 1/2 cups wholemeal flour
  • 1 teaspoon baking powder
  • 2 tablespoons black goji berry powder
  • 1 cup blueberries (fresh or frozen)

Preparation

  1. Preheat oven to 180°C and grease a baking tin loaf.

  2. Mix ground flax seeds with 3 tablespoons of water, let sit for 10 minutes until gel forms.

  3. In a mixing bowl, use an electric mixer to beat flax-seed mixture, milk, oil, sugar, and vanilla.

  4. Sift in flour and baking powder, mix until combined.

  5. Mix in goji berry powder.

  6. Fold in blueberries and mix until just combined.

  7. Transfer the batter into the prepared loaf tin.

  8. Bake for 40-45 minutes until golden brown and a toothpick comes out clean.

  9. Allow 5 minutes to cool in the tin before removing, then cool completely on a rack before slicing.
