Zucchini Oats with Fruit Toppings

Ingredients

  • 250 ml almond milk
  • 1/2 zucchini, peeled and grated
  • 4 tablespoons oats
  • 1 teaspoon hemp seeds
  • 1 teaspoon chia seeds
  • 1 teaspoon maple syrup

Toppings

  • frozen blackberries and blueberries
  • vegan chocolate
  • peanut butter
  • quinoa puffs
  • mulberries
  • shredded coconut

Preparation

  1. Cook the frozen blackberries and blueberries in a saucepan until softened.

  2. Combine almond milk, prepared zucchini, oats, hemp seeds, chia seeds, and maple syrup in a pot

  3. Heat the mixture over medium heat, stirring occasionally, until the oats are tender and creamy, about 5-10 minutes

  4. Serve the oat mixture in a bowl and top with the cooked berries, vegan chocolate, peanut butter, quinoa puffs, mulberries, and shredded coconut
