Zucchini Oats with Fruit Toppings
Ingredients
- 250 ml almond milk
- 1/2 zucchini, peeled and grated
- 4 tablespoons oats
- 1 teaspoon hemp seeds
- 1 teaspoon chia seeds
- 1 teaspoon maple syrup
Toppings
- frozen blackberries and blueberries
- vegan chocolate
- peanut butter
- quinoa puffs
- mulberries
- shredded coconut
Preparation
Cook the frozen blackberries and blueberries in a saucepan until softened.
Combine almond milk, prepared zucchini, oats, hemp seeds, chia seeds, and maple syrup in a pot
Heat the mixture over medium heat, stirring occasionally, until the oats are tender and creamy, about 5-10 minutes
Serve the oat mixture in a bowl and top with the cooked berries, vegan chocolate, peanut butter, quinoa puffs, mulberries, and shredded coconut
