Cauliflower Oatmeal with Kiwi Topping
Ingredients
- 250 ml almond milk
- 3 tablespoons cauliflower rice
- 3 tablespoons oats
- 1 teaspoon hemp seeds
- 1 teaspoon flax seeds
- 1 teaspoon chia seeds
- 1 teaspoon raisins
Toppings
- peanut butter
- 1/2 kiwi
- 1 date
- shredded coconut
- mulberries
Preparation
Combine almond milk, cauliflower rice, oats, hemp seeds, flax seeds, chia seeds, and raisins in a saucepan and cook over medium heat until thickened and oats are soft, stirring occasionally, for about 5-10 minutes.
Remove from heat, let cool slightly if desired, then top with peanut butter, sliced kiwi, chopped date, shredded coconut, and mulberries before serving.
