Cauliflower Oatmeal with Kiwi Topping

Ingredients

  • 250 ml almond milk
  • 3 tablespoons cauliflower rice
  • 3 tablespoons oats
  • 1 teaspoon hemp seeds
  • 1 teaspoon flax seeds
  • 1 teaspoon chia seeds
  • 1 teaspoon raisins

Toppings

  • peanut butter
  • 1/2 kiwi
  • 1 date
  • shredded coconut
  • mulberries

Preparation

  1. Combine almond milk, cauliflower rice, oats, hemp seeds, flax seeds, chia seeds, and raisins in a saucepan and cook over medium heat until thickened and oats are soft, stirring occasionally, for about 5-10 minutes.

  2. Remove from heat, let cool slightly if desired, then top with peanut butter, sliced kiwi, chopped date, shredded coconut, and mulberries before serving.
