Easy Gluten-Free Banana Pancakes

Ingredients

  • 1 tablespoon buckwheat flour
  • 1 tablespoon plant-based protein powder (or more buckwheat flour)
  • 2 tablespoons shredded coconut
  • 1 egg
  • 1/4 cup plant-based milk
  • 1 teaspoon baking powder

Preparation

  1. Whisk all the ingredients together until no lumps remain.

  2. Cook the batter on a skillet with a little coconut oil or butter, flipping after about 3 minutes on each side.

  3. Decorate with banana slices, coconut flakes, and a dollop of sugar-free hazelnut & cocoa spread.
