Easy Gluten-Free Banana Pancakes
Ingredients
- 1 tablespoon buckwheat flour
- 1 tablespoon plant-based protein powder (or more buckwheat flour)
- 2 tablespoons shredded coconut
- 1 egg
- 1/4 cup plant-based milk
- 1 teaspoon baking powder
Preparation
Whisk all the ingredients together until no lumps remain.
Cook the batter on a skillet with a little coconut oil or butter, flipping after about 3 minutes on each side.
Decorate with banana slices, coconut flakes, and a dollop of sugar-free hazelnut & cocoa spread.
