Javanese Jackfruit Sweet Stew
Ingredients
- 500 grams young jackfruit
- 2 glasses coconut milk from 1 coconut
- 1 piece palm sugar
- 3 tablespoons sweet soy sauce
- 1 piece galangal
- 3 bay leaves
- 1 stalk Javanese chili
- A little cinnamon
- Oil for sautéing
Ground spices
- 2 curly red chilies
- 5 shallots
- 3 garlic cloves
- 4 candlenuts
- 1 teaspoon coriander
- 1/2 teaspoon pepper
- 1 teaspoon salt
Preparation
Roughly chop the young jackfruit, then boil until tender and drain.
Grind the spices using a blender, then sauté with galangal, bay leaves, Javanese chili, and cinnamon.
Add coconut milk, the boiled jackfruit, sliced palm sugar, and sweet soy sauce.
Stir and cook on low heat until the sauce reduces slightly, about 1 hour.
Taste and adjust seasoning, then turn off the heat.
Tips
Adjust the sauce consistency to taste; traditionally, gudeg is a bit dry, but this version is slightly wet for better pairing with hot rice.
