Indonesian Bacem Fried Chicken

Ingredients

  • 1 kg chicken, cut to preference
  • Water from 3-4 mature coconuts
  • 1 finger-length galangal, smashed
  • 4 bay leaves
  • 65 grams palm sugar, grated
  • Salt to taste

Spice paste

  • 8 shallots
  • 4 garlic cloves
  • 1/4 teaspoon grated nutmeg
  • 4 candlenuts
  • 1 teaspoon coriander seeds

Sambal

  • Green chilies to taste
  • 1 garlic clove
  • Salt to taste
  • MSG to taste

Preparation

  1. Put all ingredients into a pot.

  2. Braise over low heat until the spices are absorbed.

  3. Taste and adjust the seasoning.

  4. Drain the chicken.

  5. Heat oil and fry the chicken briefly until golden brown, do not let it burn.

  6. Serve with fresh vegetables and the chili sambal.

Green chili sambal

  1. Pound green chilies, garlic, salt, and MSG together.

  2. Pour hot oil from frying the chicken over the mixture.
