Quick Stir-Fry with Preserved Garlic

Ingredients

  • Garlic cloves
  • Vegetable oil

Stir-fry additions

  • Shrimp or meatballs (optional)
  • Mixed vegetables (e.g., mustard greens, cucumber, bean sprouts)
  • Ground pepper
  • Oyster sauce
  • Salt
  • Sugar
  • Fish sauce (optional)

Preparation

  1. Peel, wash, and dry garlic cloves with a tissue.

  2. Chop the garlic finely and place it in a glass bottle.

  3. Pour in enough vegetable oil to cover the garlic, seal the bottle tightly, and store in the refrigerator.

  4. For stir-frying, remove the preserved garlic oil with a clean, dry spoon and add to a pan.

  5. Heat until fragrant.

  6. Add optional shrimp or meatballs and cook.

  7. Add mixed vegetables and sauté.

  8. Season with ground pepper, oyster sauce, salt, sugar, and optional fish sauce.

  9. Cook until vegetables are done, taste and adjust seasoning, then serve.

Tips

  1. Store the preserved garlic in the refrigerator door.

  2. If the oil solidifies, gently scoop it out with a spoon.

  3. Always use a clean and dry spoon to avoid contamination and maintain freshness.
