Traditional Siirt Bulgur Meatballs

Ingredients

  • 1 cup fine bulgur
  • 200g ground meat
  • 1 boiled potato
  • 1 teaspoon pepper paste
  • 1 egg
  • 1 onion
  • Half bunch parsley
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 teaspoon baking soda

Preparation

  1. Take the bulgur into a mixing bowl and soak it with hot water.

  2. After the bulgur has absorbed the water, add the pepper paste, boiled potato, egg, ground meat, onion, salt, spices, baking soda, and parsley.

  3. Knead all ingredients thoroughly, shape into large köfte, and fry them.
