Baked Jawi Rice Flour Cake
Ingredients
- 300 grams rice flour
- 1 tablespoon corn flour or tapioca flour
- 300 grams palm sugar
- 600 grams coconut milk
- 600 grams water
- 1/2 teaspoon fine salt
Preparation
Cook the sugar with the measured water first.
Strain and add to the sifted flour, then add coconut milk and salt, and stir until well combined.
Stir over low heat until slightly lumpy and thickened.
Grease an 8x8 inch pan with butter or oil.
Pour the mixture into the pan.
Bake at 200 degrees Celsius for 1 hour with top and bottom heat.
Once the top is dry, bake for an additional 20 minutes with bottom heat to crisp the bottom.
Tips
Reduce the sugar amount for a less sweet version.
