Cheesy Fried Potato Slices
Ingredients
- 4 large potatoes
- 1/2 cup ketchup
- 1 medium bell pepper, thinly sliced into rounds
- 1/4 cup black olives, sliced
- 2 tablespoons chopped parsley
- 1 large tomato, chopped
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
For frying
- corn oil
For garnish

Preparation
Cut the potatoes into thick slices about 1 inch thick.
In a deep skillet, heat corn oil to a depth of about 2 inches over medium heat.
Fry the potato slices until golden brown and fully cooked, then drain on paper towels.
Arrange the potato slices in a shallow baking dish. Spread ketchup over them, add bell pepper slices, olives, parsley, tomato, mozzarella, and cheddar cheese.
Bake in the oven for 5 minutes or until the cheese is golden brown. Serve hot.
