Cheesy Fried Potato Slices

Ingredients

  • 4 large potatoes
  • 1/2 cup ketchup
  • 1 medium bell pepper, thinly sliced into rounds
  • 1/4 cup black olives, sliced
  • 2 tablespoons chopped parsley
  • 1 large tomato, chopped
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

For frying

  • corn oil

For garnish

  • chopped parsley

Preparation

  1. Cut the potatoes into thick slices about 1 inch thick.

  2. In a deep skillet, heat corn oil to a depth of about 2 inches over medium heat.

  3. Fry the potato slices until golden brown and fully cooked, then drain on paper towels.

  4. Arrange the potato slices in a shallow baking dish. Spread ketchup over them, add bell pepper slices, olives, parsley, tomato, mozzarella, and cheddar cheese.

  5. Bake in the oven for 5 minutes or until the cheese is golden brown. Serve hot.
