Crispy Ice Cream Cookies
Ingredients
- 200 grams softened butter
- 1 cup powdered sugar (130 grams)
- 130 ml vegetable oil
- 1 egg white
- 1 packet vanilla
- 1 cup starch (130 grams)
- 4 cups flour (520 grams)
- 1 teaspoon baking powder (level)
- 1 teacup milk chocolate chips
Preparation
In a mixing bowl, combine all ingredients except the chocolate chips and flour, and mix them together.
Gradually add the flour and mix carefully to form a soft dough.
Add the chocolate chips and knead the mixture.
Shape the dough using an ice cream scoop and place on a parchment-lined baking sheet, spaced apart.
Bake in a preheated oven at 170°C with top and bottom heat for 23-24 minutes until set but not browned, monitoring carefully.
