Cypriot Savoury Olive Pie

Ingredients

  • 3 eggs, room temperature
  • 1/2 cup olive oil
  • 2 cups milk
  • 3 1/2 cups plain flour
  • 3 tsp baking powder
  • 1 tbsp dry mint
  • 1 cup spring onions, finely chopped
  • 1 cup fresh coriander, finely chopped
  • 3 cups pitted black olives, roughly chopped
  • sesame seeds

Preparation

  1. Preheat the oven to 180C

  2. Prepare the olives, coriander and spring onions and put them in a large bowl with the mint, then set aside

  3. In another large bowl, beat together the eggs, oil and milk

  4. Put a fine sieve over the bowl with the wet ingredients and sieve in the flour and baking powder, then mix until just combined

  5. Fold in the remaining ingredients using a spatula

  6. Pour into a well greased bund tin, sprinkle with sesame seeds and bake in the middle of the oven for around 50 to 55 minutes until a knife comes out clean

  7. Allow it to cool and turn out of the tin

Tips

  1. The most important thing with eliopitta is using high-quality, tasty olives, such as Cypriot black olives, for the best flavor
