Cypriot Savoury Olive Pie
Ingredients
- 3 eggs, room temperature
- 1/2 cup olive oil
- 2 cups milk
- 3 1/2 cups plain flour
- 3 tsp baking powder
- 1 tbsp dry mint
- 1 cup spring onions, finely chopped
- 1 cup fresh coriander, finely chopped
- 3 cups pitted black olives, roughly chopped
- sesame seeds
Preparation
Preheat the oven to 180C
Prepare the olives, coriander and spring onions and put them in a large bowl with the mint, then set aside
In another large bowl, beat together the eggs, oil and milk
Put a fine sieve over the bowl with the wet ingredients and sieve in the flour and baking powder, then mix until just combined
Fold in the remaining ingredients using a spatula
Pour into a well greased bund tin, sprinkle with sesame seeds and bake in the middle of the oven for around 50 to 55 minutes until a knife comes out clean
Allow it to cool and turn out of the tin
