Baked Tahini Banana Loaf

Ingredients

  • 3 ripe medium bananas, mashed (about 1 cup)
  • 1/3 cup olive oil
  • 1/2 cup honey
  • 2 eggs, room temperature, beaten
  • 1/2 cup tahini
  • 1 tsp vanilla
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking powder
  • 1 1/2 cups plain flour
  • 1 tsp sesame seeds

Glaze

  • 1 tbsp tahini
  • 1 tbsp honey
  • 1 tsp warm water

Preparation

  1. Preheat oven to 175C. Line a 9 x 5 inch loaf pan and set aside.

  2. In a large bowl, whisk together the mashed bananas with the olive oil. Add the honey, tahini, vanilla and eggs and whisk to combine.

  3. Sieve the flour, baking powder and salt into the bowl and fold the ingredients together without overmixing.

  4. Pour the batter into the prepared loaf pan and sprinkle sesame seeds on top.

  5. Bake for 35 minutes, then cover with foil and bake for another 25 minutes, or until a knife inserted in the center comes out clean.

  6. Mix the glaze ingredients in a small bowl until smooth and pour over the warm cake.

  7. Allow the cake to cool before removing from the pan and slicing.

Notes

  1. This baked good has a texture similar to a blondie and can be experimented with different baking dishes for varied results.
