Yazd Cake with Raisins and Sesame
Ingredients
- 3 medium eggs (150 grams without shell)
- 200 grams sugar
- 30 grams honey
- 300 grams white flour
- 175 grams liquid oil
- 150 grams yogurt at room temperature
- 1.5 teaspoons baking powder
- 1 teaspoon fruit salt
- 1 teaspoon cardamom powder
- a little vanilla
- sesame seeds for decoration
- approximately 100 grams raisins
Preparation
Sift the flour, baking powder, and fruit salt three times
Beat sugar, eggs, cardamom powder, and vanilla until stretchy and white
Add honey and mix well
Gradually add liquid oil and beat for one minute
Add yogurt and beat for one minute
Add the flour mixture in batches and mix with a spatula or on low mixer speed
Add raisins and mix them in
Fill the Yazd cake capsules almost to the top, leaving about 2 millimeters space
Optionally, make a cross on each cake with an oiled knife before baking
Preheat the oven to 240-250°C for gas or 230°C for electric
Bake for 12 to 15 minutes
Tips
Use a high temperature and do not fear overfilling the molds as it will not cause issues
For best results, ensure the oven temperature is accurate and the molds are properly filled
