Pecan Chocolate Cookies

Ingredients

  • 2 flax eggs
  • 1/4 cup softened coconut butter
  • 1/2 tbsp melted or liquid coconut oil
  • 3-4 tbsp pure maple syrup
  • 2 tbsp almond milk
  • 1 tsp pure vanilla
  • 3/4 cup almond flour
  • 1/4 cup chopped pecans
  • 3 tbsp vegan dark Chocolate chips
  • Dash of Nutmeg
  • Dash of Cinnamon
  • 1 tsp Baking soda
  • 1 tsp Sea salt

Preparation

  1. Soften coconut butter by spooning into a bowl and microwaving for 20-30 seconds or heating in a saucepan for 1-2 minutes

  2. Mix all wet ingredients in a large bowl

  3. Add almond flour, pecans, nutmeg, cinnamon and baking soda and mix until cookie dough forms

  4. Fold in chocolate chips

  5. Spoon onto a lined baking sheet, sprinkle with sea salt and bake at 350 for 15-20 minutes or until browned along the edges and cooked through

  6. Let cool and enjoy! -
