Pecan Chocolate Cookies
Ingredients
- 2 flax eggs
- 1/4 cup softened coconut butter
- 1/2 tbsp melted or liquid coconut oil
- 3-4 tbsp pure maple syrup
- 2 tbsp almond milk
- 1 tsp pure vanilla
- 3/4 cup almond flour
- 1/4 cup chopped pecans
- 3 tbsp vegan dark Chocolate chips
- Dash of Nutmeg
- Dash of Cinnamon
- 1 tsp Baking soda
- 1 tsp Sea salt
Preparation
Soften coconut butter by spooning into a bowl and microwaving for 20-30 seconds or heating in a saucepan for 1-2 minutes
Mix all wet ingredients in a large bowl
Add almond flour, pecans, nutmeg, cinnamon and baking soda and mix until cookie dough forms
Fold in chocolate chips
Spoon onto a lined baking sheet, sprinkle with sea salt and bake at 350 for 15-20 minutes or until browned along the edges and cooked through
