Turkish Semolina Cookies with Syrup

Ingredients

  • 125 grams butter
  • 1 tea cup vegetable oil
  • 2 eggs
  • 1 tea cup powdered sugar
  • 1 tea cup semolina
  • 1 packet vanilla
  • 1 packet baking powder
  • 1 lemon zest
  • 3.5 cups flour (add gradually)

Syrup

  • 2.5 cups sugar
  • 2.5 cups water
  • 2-3 drops lemon juice

Preparation

  1. First, prepare the syrup by boiling the syrup ingredients in a pot.

  2. After boiling starts, continue for 5 minutes, then turn off the heat and set aside to cool.

  3. In a bowl, add the room temperature melted butter.

  4. Add eggs, vegetable oil, powdered sugar, and semolina; mix well.

  5. Incorporate lemon zest, vanilla, and baking powder.

  6. Gradually add flour to form a soft dough.

  7. Shape small pieces of dough as desired and place on a greased baking tray.

  8. Brush with egg yolk and optionally score with a fork.

  9. Bake at 180 degrees Celsius until golden brown.

  10. Pour the cooled syrup over the hot cookies right after removing from the oven.

  11. Decorate as desired, let it rest, and serve.

Tips

  1. The dough should be soft; if too hard, it will not absorb the syrup properly.

  2. Adjust flour based on tea cup size used, as it may vary.
