Chili Oil My Way

Ingredients

  • 1/2 cup ground red pepper
  • 1/2 cup togarashi
  • 1/4 cup mushroom powder
  • 2 cloves garlic, crushed
  • 3 tablespoons chili flakes
  • Pinch of salt
  • Pinch of MSG
  • 1/2 cup roasted sesame seeds
  • 1 tablespoon sugar
  • 2 cups canola oil
  • 1 teaspoon sesame oil
  • 1 teaspoon black vinegar

Optional additions

  • 1 cup crispy fried garlic
  • 2 tablespoons garlic powder
  • 1 teaspoon onion powder

Preparation

  1. Combine all the dry ingredients in a heat-proof bowl.

  2. Heat the canola oil and sesame oil in a saucepan over medium heat until hot but not smoking.

  3. Pour the hot oil over the spice mixture and stir well.

  4. Add the black vinegar and mix thoroughly.

  5. Allow the mixture to cool completely before transferring to a jar.

  6. Let the flavors infuse for at least a few hours or overnight before using.
