Fluffy Vegan Pancakes for Breakfast

Ingredients

  • 1 cup flour
  • 1 & 1/4 cup plant-based milk
  • 2 Tablespoons lemon juice
  • 2 tablespoon maple syrup or 2/3 cup sugar
  • 1 teaspoon vanilla extract and/or cinnamon(optional)
  • 1/4 teaspoon baking soda
  • 2 teaspoons baking powder (optional but makes fluffier)

Preparation

  1. In a bowl, combine the milk with lemon juice and set aside. In a large bowl mix the flour, sugar, baking powder and baking soda.

  2. Now add in the soy milk mixture and vanilla extra. Stir until incorporated.

  3. Heat a large nonstick pan over medium heat and pour batter into the pan.

  4. Cook until the edges dry out slightly and little bubbles start forming on the surface (2-3 minutes). Flip and cook for an additional minute or two (until this side is lightly brown.)

  5. Serve still warm and go crazy with toppings! I like frozen berries, maple syrup, tahini, chocolate chips, banana slices, poppyseeds, peanut butter. Enjoy!
