Greek Lamb Sandwiches
Ingredients
- 3 -4 lamb leg steaks
- 3 tbsp olive oil
- 3 tbsp lemon juice
- 1 tbsp dried oregano
- 2 cloves garlic, finely grated
- 1/2 tsp cayenne pepper
- 3/4 tsp cumin powder
- 1 heaped tsp smoked paprika
- good pinch of salt and pepper
- 30g feta for topping
- handful mixed salad leaves
- easy flatbreads
- to make 6 small flatbreads
- 250g strong white or plain flour
- 190g greek yoghurt
- 2-3 tbsp olive oil
- 2 tbsp water
- good pinch of salt
- extra flour, for dusting
- tzatziki
- 200g greek yogurt
- 1/2 cucumber
- 1 tsp finely grated garlic
- handful fresh mint leaves, finely chopped
- handful fresh parsley leaves, finely chopped
- good pinch of salt
Preparation
Put all the ingredients except the lamb, feta and salad leaves into a mixing bowl and combine
Add the lamb and coat well all over with the marinade
Leave to marinate for at least a couple of hours, but overnight is best
Griddle or grill the lamb steaks on high for 2 -4 mins each side depending on how pink you like it
Leave to rest for 5 mins before slicing against the grain
Extra flour, for dusting
Put all the ingredients in a mixing bowl, mix and bring together into a dough. Knead the dough in the bowl for a few minutes
Weigh and divide into 6 balls
Lightly flour your kitchen top, hands and rolling pin and roll out each one
Add a little oil to a non-stick pan on a medium high heat and cook for 2-3 mins on each side
Finely grate the cucumber, put it into the centre of some kitchen roll or a clean tea towel and squeeze out the excess water
Combine with all the other ingredients in a bowl and leave for 20 minutes for the flavours to develop
Just top each flatbread with a few salad leaves, a spoonful of tzatziki a few pieces of the lamb and crumble a little feta on top
