Instant Gujarati Vegetable Handvo

Ingredients

  • 1 cup rice
  • 1/3 cup chana dal
  • 1/3 cup moong dal
  • 1/4 cup toor dal
  • 1/4 cup urad dal
  • 1 cup curd
  • 1/2 cup lauki (bottle gourd)
  • 1/3 cup cranberries
  • 1/3 cup coriander
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 1 tsp green chilies and ginger
  • 1 tsp fruit salt
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp sesame seeds
  • a pinch asafoetida
  • curry leaves

Preparation

  1. Soak the rice and dals in water for several hours

  2. Grind the soaked mixture with curd to form a batter

  3. Mix in the lauki, cranberries, coriander, turmeric powder, salt, and green chilies and ginger

  4. Add fruit salt just before cooking and stir gently

  5. Heat oil in a pan and add mustard seeds, sesame seeds, asafoetida, and curry leaves for tempering

  6. Pour the batter into the pan with tempering and cook until crispy on the outside and soft inside

Notes

  1. US Cranberries are an excellent source of antioxidants and vitamins C, E, and K

  2. This dish is perfect for breakfast or lunchboxes

  3. Enjoy on special occasions like Rakshabandhan
