No-Bake Creamy Lime Bars

Ingredients

Base

  • 1 cup rolled oats
  • 3/4 cup dates

Lime cream

  • 1 cup coconut cream (thick part from a chilled can)
  • 1 cup cashew nuts (boil 5 min & drain)
  • 1 big lime
  • 2 tbsp maple syrup

Preparation

  1. In a food processor, mix oats and dates until sticky. Transfer to a 15cm/6-inch square form covered in parchment paper and place in the fridge.

  2. In a high-speed blender (900W or higher), add lime juice and zest from the lime plus all other cream ingredients, using only the thick part from the coconut cream can. Mix until completely smooth.

  3. Pour the filling over the oat base and place the form in the freezer for at least 3 hours or until the cream has set. Decorate with more lime zest and lime slices. Enjoy!
