Scrambled Tofu Breakfast Brunch Option

Ingredients

  • 1tbsp teaspoon nutritional yeast
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon paprika
  • Pinch salt
  • Pinch black pepper
  • 1 clove garlic, minced
  • 1/2 package firm tofu, very well drained
  • 1 tablespoon water
  • Chopped Parsley for topping

Preparation

  1. Place the olive in a pan, add in the garlic on a low heat, gently cook for a minute.

  2. Add in the tofu crumbling into the pan, then add the rest of the ingredients except the parsley, cook for 2 minutes.

  3. Add the parsley and let cook together for 1-2 minutes and you’re ready to go.

  4. Serve with avocado, cooked mushrooms, spinach and tomatoes, on a slice of sourdough, rye bread or gluten free choice.
