Scrambled Tofu Breakfast Brunch Option
Ingredients
- 1tbsp teaspoon nutritional yeast
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground cumin
- 1/4 teaspoon paprika
- Pinch salt
- Pinch black pepper
- 1 clove garlic, minced
- 1/2 package firm tofu, very well drained
- 1 tablespoon water
- Chopped Parsley for topping
Preparation
Place the olive in a pan, add in the garlic on a low heat, gently cook for a minute.
Add in the tofu crumbling into the pan, then add the rest of the ingredients except the parsley, cook for 2 minutes.
Add the parsley and let cook together for 1-2 minutes and you’re ready to go.
Serve with avocado, cooked mushrooms, spinach and tomatoes, on a slice of sourdough, rye bread or gluten free choice.
