Vegan Gluten-Free Mandarin Thyme Pancakes

Ingredients

  • 1 cup oat flour
  • 2 tsp baking powder
  • 1 cup almond milk
  • 2 tbsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • 1/2 tsp dried thyme
  • 2 tbsp coconut oil

Toppings

  • plant based yoghurt
  • mandarins
  • fresh thyme

Preparation

  1. Mix all dry ingredients in a bowl and stir well.

  2. Mix all wet ingredients in a separate bowl and add to the dry ingredients.

  3. Heat some oil in a frying pan.

  4. Cook the pancakes for about 3 minutes per side.

  5. Stack them up, add toppings and enjoy.
