Vegan Gluten-Free Mandarin Thyme Pancakes
Ingredients
- 1 cup oat flour
- 2 tsp baking powder
- 1 cup almond milk
- 2 tbsp apple cider vinegar
- 1 tsp vanilla extract
- 1 tsp orange zest
- 1/2 tsp dried thyme
- 2 tbsp coconut oil
Toppings
- plant based yoghurt
- mandarins
- fresh thyme
Preparation
Mix all dry ingredients in a bowl and stir well.
Mix all wet ingredients in a separate bowl and add to the dry ingredients.
Heat some oil in a frying pan.
Cook the pancakes for about 3 minutes per side.
Stack them up, add toppings and enjoy.
