Tofu Stir Fry

Ingredients

  • 1 package of extra firm tofu (12 ounce)
  • 1 package of stir fry veggies (12 ounce)
  • 1 bell pepper
  • Olive or avocado oil
  • sauce
  • 1/3 cup coconut aminos
  • 2 tbsp red curry paste
  • 3 tbsp water
  • 1/2 tsp garlic powder

Preparation

  1. Heat a skillet over medium heat. Thaw your veggies either by microwaving or boiling

  2. Rinse and pat your tofu dry. Cut into cubes

  3. Add some oil to your pan, add the tofu, sauté for 2-3 mins. Add your veggies in (cut the bell pepper for extra veggies in addition to the prepackaged veggies). Sauté the veggies for 10-12 minutes with the tofu

  4. While the veggies sauté, make the sauce. Just combine all the sauce ingredients into a bowl. Add to the stir fry after it’s done cooking, reduce heat, and let it simmer in the pan for 2-3 mins. Serve with rice and devour
