Vegan Cauliflower Rice Stir-Fry
Ingredients
- 1 medium cauliflower
- 1 tbsp sesame oil
- 300 grams thinly sliced tofu
- 1 finely chopped onion
- 1 cup frozen peas
- 1 medium broccoli
- 1/4 cup tamari sauce, plus extra for serving
- Mint leaves for serving
Preparation
Place the cauliflower in a food processor and pulse until it is small and has the texture of rice or couscous.
Heat the wok over medium heat, add the sesame oil, and cook the tofu for 2 minutes on each side, then remove and keep warm; add the onion, garlic, peas, beans, and broccoli to the wok and fry quickly for about 3-4 minutes until tender, then remove, set aside, and keep warm.
Increase the heat to high, add the cauliflower rice to the wok along with the tamari sauce and curry powder, quickly fry while mixing in the flavorings, cover, and cook for approximately 5-6 minutes, stirring frequently, until the cauliflower is slightly crisp on the outside but tender on the inside.
Remove from heat and combine with the cooked tofu and vegetables, then serve with mint leaves
