Spicy Thai Chicken Stir-Fry

Ingredients

  • Chicken
  • Ground turmeric
  • Salt
  • Fresh chilies
  • Chili paste
  • Fresh turmeric
  • Garlic
  • Kaffir lime leaves
  • Lemongrass
  • Chili sauce
  • Tomato sauce
  • Oyster sauce
  • Sugar
  • Monosodium glutamate (MSG)
  • Onion

Preparation

  1. Mix the chicken with ground turmeric and a little salt, then fry until half-cooked and set aside.

  2. Blend fresh chilies, chili paste, fresh turmeric, and garlic into a semi-smooth paste.

  3. Stir-fry the blended paste until fragrant.

  4. Add torn kaffir lime leaves and bruised lemongrass, and cook until the oil separates and the mixture is well-cooked.

  5. Add chili sauce, tomato sauce, oyster sauce, salt, sugar, and MSG, and let it simmer.

  6. Add the partially fried chicken and cook until heated through.

  7. Garnish with onion and fresh chilies, and serve.
