Vegan Tofu Vegetable Stir Fry Dinner
Ingredients
Baked tofu
- 1 block firm tofu, drained, pressed, and cut into cubes
- 2 tsp garlic chili sauce
- 1 tbsp tamari
- 1 tbsp nutritional yeast
Stir fry
- sliced mushrooms
- sliced onion
- broccoli florets
- sliced bell pepper
- 2 tbsp water
- 2 splashes tamari
- 1 tbsp sweet chili sauce
For serving
- cooked brown jasmine rice
Preparation
Baked tofu
Add tofu cubes and the remaining ingredients to a container
Seal the container and gently shake to coat the tofu
Spread the coated tofu on a lined baking sheet
Bake at 400°F for 20-25 minutes
Stir fry
Sauté mushrooms and onion in a pan until onions are translucent
Add broccoli, a splash of tamari, and 2 tablespoons water
Cover and cook until broccoli turns bright green, about 4-5 minutes
Add bell pepper, another splash of tamari, and 1 tablespoon sweet chili sauce
Sauté until vegetables are coated and most liquid has cooked off, about 3 minutes
Stir in the baked tofu and coat with the sauce
Remove from heat
Serving
Serve the stir fry mixture over cooked brown jasmine rice
