Vegan Tofu Vegetable Stir Fry Dinner

Ingredients

Baked tofu

  • 1 block firm tofu, drained, pressed, and cut into cubes
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • 1 tbsp nutritional yeast

Stir fry

  • sliced mushrooms
  • sliced onion
  • broccoli florets
  • sliced bell pepper
  • 2 tbsp water
  • 2 splashes tamari
  • 1 tbsp sweet chili sauce

For serving

  • cooked brown jasmine rice

Preparation

Baked tofu

  1. Add tofu cubes and the remaining ingredients to a container

  2. Seal the container and gently shake to coat the tofu

  3. Spread the coated tofu on a lined baking sheet

  4. Bake at 400°F for 20-25 minutes

Stir fry

  1. Sauté mushrooms and onion in a pan until onions are translucent

  2. Add broccoli, a splash of tamari, and 2 tablespoons water

  3. Cover and cook until broccoli turns bright green, about 4-5 minutes

  4. Add bell pepper, another splash of tamari, and 1 tablespoon sweet chili sauce

  5. Sauté until vegetables are coated and most liquid has cooked off, about 3 minutes

  6. Stir in the baked tofu and coat with the sauce

  7. Remove from heat

Serving

  1. Serve the stir fry mixture over cooked brown jasmine rice
