Brazilian Cheese Cookies with Nata Cream

Ingredients

  • 1 (300g) pot NATA cream
  • 8 eggs
  • 4 measures (using the NATA pot) sweet cassava starch
  • 3 measures (using the NATA pot) grated cured cheese
  • 1 measure (using the NATA pot) milk
  • 4 tablespoons butter
  • 1 dessert spoon salt (adjust according to cheese saltiness)

Preparation

  1. Place the cassava starch in a bowl

  2. Moisten with NATA cream and butter, then mix until the starch dust settles

  3. Add the grated cheese and salt (adjusting the amount based on the cheese's saltiness)

  4. Make a well in the center and add a small amount of milk

  5. Gradually add the eggs and the remaining milk

  6. Knead well until the dough is homogeneous and holds together for rolling; do not let it become too soft, so knead thoroughly

  1. NATA cream is available in supermarkets in 300g pots
