Savory Paleo Sweet Potato Waffles

Ingredients

  • 1 cup mashed sweet potato
  • 1 egg
  • 1 tsp cinnamon
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened almond milk
  • 1/2 scoop Keto collagen

Accompaniments

  • 1 egg
  • ghee
  • spinach
  • 1/2 avocado

Preparation

  1. Mash the baked sweet potato.

  2. Combine the mashed sweet potato with 1 egg, 1 tsp cinnamon, 2 tbsp coconut flour, 1/4 cup unsweetened almond milk, and 1/2 scoop Keto collagen.

  3. Cook the mixture in a waffle maker for 10 minutes.

  4. Fry an egg in ghee.

  5. Sauté spinach.

  6. Serve the waffle with the fried egg, sautéed spinach, and half an avocado.
