Cauliflower Rice Breakfast Scramble with Egg and Veggies

Ingredients

  • 1 egg
  • 1/2 avocado
  • cauliflower rice
  • tomatoes
  • mushrooms
  • spinach
  • garlic
  • pink Himalayan salt
  • ghee
  • avocado oil

Preparation

  1. Sauté cauliflower rice with mushrooms, spinach, tomatoes, garlic, and pink Himalayan salt in a cast iron skillet using avocado oil.

  2. Fry the egg in ghee once the vegetable mixture is done.

  3. Serve the dish with avocado on the side.
