Easy Lunch with Fried Egg and Roasted Carrots
Ingredients
- 1 egg
- garlic ghee
- carrots
- avocado oil
- new bae seasoning
- tomatoes
- everyday seasoning
- 1/2 avocado
- quinoa
- mushrooms
Preparation
Roast carrots at 400°F for 45 minutes in avocado oil and seasoned with new bae seasoning.
Fry 1 egg in garlic ghee.
Sauté mushrooms.
Season tomatoes with everyday seasoning.
Serve with 1/2 avocado and quinoa, optionally cold.
