Easy Lunch with Fried Egg and Roasted Carrots

Ingredients

  • 1 egg
  • garlic ghee
  • carrots
  • avocado oil
  • new bae seasoning
  • tomatoes
  • everyday seasoning
  • 1/2 avocado
  • quinoa
  • mushrooms

Preparation

  1. Roast carrots at 400°F for 45 minutes in avocado oil and seasoned with new bae seasoning.

  2. Fry 1 egg in garlic ghee.

  3. Sauté mushrooms.

  4. Season tomatoes with everyday seasoning.

  5. Serve with 1/2 avocado and quinoa, optionally cold.
