Sweet Potato Keria with Palm Sugar
Ingredients
- 2 kg orange sweet potatoes (approximate)
- 2 cups wheat flour (approximate)
Syrup
- 1/2 cup water
- 15 tablespoons white sugar
- Palm sugar, broken into pieces
Preparation
Boil the sweet potatoes with salt until soft.
Mash them while hot.
Cool and refrigerate for at least one hour.
Gradually add wheat flour until the dough can be shaped into rings, avoiding too much flour to prevent hardness.
Shape the dough into keria rings.
Fry the shaped keria in hot oil until golden brown.
For the syrup, boil water, white sugar, and broken palm sugar on high heat until thick and sticky.
Add the fried keria to the syrup and turn off the heat.
Quickly mix to coat the keria evenly with the syrup.
Let it dry in the pan for about 5 minutes.
Serve immediately.

Quantities are approximate and may require adjustment based on dough consistency.
Ensure the dough is not too wet or dry for easy shaping and frying.
