Vegan Chai Spiced Granola

Ingredients

  • 240g or 2 cups gluten-free oats
  • 120g or 1 cup chopped pecans or walnuts
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cardamom
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon pink salt
  • 40g or 1/4 cup coconut oil
  • 75g or 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla bean paste
  • 60g or 1 cup coconut chips
  • rose petals
  • 1 teaspoon sweet potato powder

Preparation

  1. Preheat your oven to 150°C or 300°F and line a pan with parchment paper

  2. In a large mixing bowl, combine your dry ingredients

  3. Melt the coconut oil in a microwave or over a double boil

  4. Add maple syrup or honey and vanilla to the bowl and stir until all is well combined

  5. Pour your wet ingredients over your dry ingredients and stir until everything is coated

  6. Spread into a thin, even layer on the pan and bake in the oven for 25-30 minutes

  7. Once baked, let the granola cool down completely before breaking into chunks
