Burrata and Prosciutto Sandwich
Ingredients
- 1/2 cup mayonnaise
- 2 big cloves garlic, grated to a paste
- 1 garlic clove, cut in half
- 1/2 tsp white wine vinegar
- 1/2 tsp hot chilli flakes
- 1 tsp hot sauce of your choice (I used Frank’s)
- 2 slices sourdough bread
- 2 slices prosciutto
- 2 red Romano peppers
- 1/2 burrata
- 2 guindilla chillies
- basil leaves
- salt to taste
- pepper to taste
Preparation
Char the outside of the peppers either with a flame until black or in an oven or grill. Cover in a bowl for 5 minutes to cool slightly, then peel off the charred skin and mince one of the peppers.
Start by making the mayo, mixing the mayo, grated garlic, vinegar, hot sauce, chilli flakes and minced pepper. Season to taste with salt.
Toast the bread, then rub the insides with the halved garlic clove and spread over the mayo.
Add the remaining roasted pepper sliced, drape over the prosciutto, place on the guindilla chillies, the burrata, then the basil leaves.
Add a sprinkle of salt and pepper, top with the other slice of bread and enjoy.
Notes
A robust sourdough works nicely, but it would be equally good in a baguette for added crunch.
Add whatever leaves you like, such as rocket, bitter lettuce, or fresh basil leaves.
You can use store-bought mayo and mix in the add-ins instead of making it from scratch.
