Super Dense Vegan Chickpea Blondies

Ingredients

  • 1 can chickpeas, rinsed and drained
  • 1 cup / 170 g dates, soaked and drained (overnight or 15min in hot water)
  • 70 g flour (I used spelt, but you can use any)
  • 4 tbsp nut / seed butter (I used almond)
  • 50 g chocolate chips (or more ?) 1/4 tsp vanilla
  • 1 tsp baking powder
  • Generous pinch of sea salt

Preparation

  1. Preheat your oven to 180C or 350F

  2. Add the chickpeas, dates and nut butter to a food processor and blend until pretty smooth

  3. Add flour, vanilla, baking powder and sea salt and blend again

  4. Pulse or spoon the chocolate chips through the mixture

  5. Taste if the dough needs a little more sweetness

  6. If so, you can add some syrup or stevia if you like

  7. I never do

  8. Scoop in a lined brownie tin and bake at for 25 minutes

  9. If you want them to be a little bit higher like mine, just use half of the brownie tin

  10. Let them cool, cut them into squares and ENJOY
