Baked Prestige Swiss Roll

Ingredients

  • 1 package of grated coconut
  • 1 jar of coconut milk (200 ml)
  • 1 can of condensed milk
  • 5 eggs
  • 1 cup (tea) of sugar
  • 1/2 cup (tea) of wheat flour
  • 1 teaspoon of baking powder
  • 1/2 cup (tea) of cocoa powder
  • 300 g chopped milk chocolate
  • 1/2 can of heavy cream

Preparation

  1. Hydrate the grated coconut in the coconut milk.

  2. For the filling, in a bowl, mix the condensed milk and the hydrated grated coconut.

  3. Grease and line with parchment paper a baking sheet of 30 x 45 cm.

  4. Spread the filling over the entire bottom of the baking sheet and set aside.

  5. For the batter, in a mixer, beat the eggs and sugar until a whitish cream forms and doubles in volume.

  6. Turn off the mixer and gradually add the wheat flour, baking powder, and cocoa powder, sifted.

  7. Pour the batter over the filling and bake in the oven, preheated to 200 °C, for 20 minutes or until a toothpick inserted comes out clean.

  8. Remove from oven, let cool slightly, and unmold onto a damp cloth sprinkled with sugar.

  9. Roll the cake tightly in the cloth and allow it to cool completely.
