Banana Volcano Cake with Caramel Topping
Ingredients
Batter
- 3 eggs
- 1 cup sugar
- 1/2 cup oil or 2 tablespoons butter or margarine
- 1 cup milk
- 2 cups flour
- 1 tablespoon baking powder
Caramel topping
- 1 cup sugar
Banana layer
- 5 bananas, sliced
- ground cinnamon, to taste
Preparation
Beat eggs, sugar, and oil until combined
Add milk and beat again
Gradually add flour and then baking powder, beating gently
Set the batter aside
In a baking pan, make caramel by placing sugar and cooking over low heat, stirring constantly, until smooth and uniform
Spread the caramel evenly over the pan and let cool slightly
Arrange sliced bananas over the caramel and sprinkle with cinnamon
Pour the batter over the bananas
Bake in a preheated medium oven for about 45 minutes, or until the aroma of banana and cinnamon is noticeable
Tips
Very ripe bananas are recommended, but less ripe bananas also work well
